Grilled Pork Tenderloin

This recipe for Grilled Pork Tenderloin is a summertime favourite around here. It has a delicious dry rub all over and a brushing of red pepper jelly. The recipe calls for two pork tenderloins which, for us, means we have leftovers for lunch the next day. I watch for pork tenderloin to go on sale and stock up my freezer at the beginning of summer.

Grilled Pork Tenderloin

1/4 cup red pepper jelly
1 tsp water
1 tbsp paprika
1 1/2 tsps salt
1 tsp sugar
1 tsp brown sugar
1 tsp chili powder
1 tsp ground cumin
1/2 tsp ground black pepper
2 pork tenderloins (approx. 1 pound each)

Preheat your grill to medium-high. Combine red pepper jelly and water and set aside. Combine paprika, salt, sugars, chili powder, cumin and black pepper. Rub evenly over pork. Place pork on grill. Cover and grill 15-20 minutes, turning occasionally. Brush pork with jelly mixture in last five minutes of grilling. Cook to internal temp of 155F. Place pork on a cutting surface and cut crosswise into medallions and serve. Suggested to serve with Rice and Beans.

This makes delicious sandwiches as well and can be served on warmed buns. Combine 1/4 cup of Ranch dressing with 1/4 cup of barbecue sauce and drizzle on top of sandwich. Delicious!
