Butter Chicken Wraps

Summer is officially here and for me that means kids. Lot of kids. They tend to gravitate to our house and I’m 100% good with it except that I serve way more lunches during the summer than I do the whole school year! I keep a steady supply of frozen pizzas and hot dogs on hand but of all the meals I serve these Butter Chicken Wraps are a clear fan favourite. I’m sure it’s because Butter Chicken is so mildly spiced, yet deliciously saucy that they love it!

I also love that these Butter Chicken Wraps require minimum effort on my part when it comes to cooking. As much as I love cooking I’m not a fan of slaving over a stove in the summer. These wraps are done in under 25 minutes. Even for those that don’t like to cook *cough cough* Lisa *cough cough*, you’ll find this recipe ridiculously easy. I like to lay everything out on a platter for the kids to put what they’d like on theirs, which also cuts down on my work. I’m a genius.

Butter Chicken Wraps

1 lb chicken tenders
Patak’s Butter Chicken Cooking Sauce for 2
4 large tortilla wraps
Baby spinach
Half a red onion, sliced thin
Half a yellow pepper, sliced thin
1 cup, shredded carrot
1/2 cup shredded mozzarella

Melt 2 tbsps butter in a medium skillet and add chicken tenders. Cook over medium-high heat until cooked through. Pour Patak’s Butter Chicken Cooking Sauce for 2 over cooked chicken and simmer for 5 minutes. Remove from heat. Layer tortilla with baby spinach, mozzarella, pepper, onion, carrot and chicken. Fold tortilla into a wrap, cut in half and serve.
