Baked Cheese in a Skillet AKA Crack

This Baked Cheese in a Skillet is one of the easiest recipes to whip together which is also what makes it so flippin’ dangerous. Cheese has it own special little place in the food world. Addicts the world over know the pleasures of cheese and how hard it can be to stop eating it once you start. The other thing cheese addicts know? Melted cheese is even better. When I was thinking what can I share as my Life Made Delicious post this month I figured this was a pretty safe bet because cheese really does make life more delicious.

Baked Cheese in A Skillet

1 pound old white cheddar
1/2 pound good melting cheese like Oka or Blackburn
1/4 cup olive oil
6 garlic cloves, thinly sliced
1 tbsp chopped fresh thyme
1 tbsp chopped fresh rosemary
1 tsp kosher salt
1 tsp fresh black pepper

Preheat broiler and position rack in middle of oven.

Chop cheese into 1 inch cubes and scatter on the bottom a 12 inch cast iron skillet. Pour olive oil over top. Mix garlic, rosemary and thyme together and sprinkle over cheese. Sprinkle with salt and pepper. Place skillet under broiler until cheese is melted and browning on top. Watch closely so the broiler doesn’t get away from you.

Serve straight out of the skillet with fresh cut baguette slices. Be sure to warn guests the pan is hot!

    Sounds scrumptious. But I don’t have a cast iron pan. Do you think a regular skillet would work? I guess I should worry about the handle

      I would highly recommend a cast iron skillet anyway, they are the best in the kitchen. Get a Lodge pre-seasoned one (available at Canadian Tire, Walmart). In the meantime, I think you could do this in a Pyrex dish as well.
