Preheat broiler and position rack in middle of oven.
Chop cheese into 1 inch cubes and scatter on the bottom a 12 inch cast iron skillet.
Pour olive oil over top.
Mix garlic, rosemary and thyme together and sprinkle over cheese. Sprinkle with salt and pepper.
Place skillet under broiler until cheese is melted and browning on top. Watch closely so the broiler doesn’t get away from you.
Serve straight out of the skillet with fresh cut baguette slices.
