S’More Brownie Bars – A Portable Campfire Treat

My kids love s’mores. I, however, am not really a fan of the traditional s’more. I mean I like the idea of them and everything. Graham crackers, chocolate, marshmallow – what’s not to love?  Overall on  a taste level though they are sort of a letdown. A little like sex without the climax.  I made these S’More Brownie Bars the other day though and I have to say that when I tried one, I was in love.

Maybe it has something to do with the fact that I’m trying to eliminate gluten from my diet and I was like a crack addict getting a hit OR these are in fact totally freaking delicious. I’m convinced it’s the brownie centre that makes it so divine. I can also say with certainty that the kids loved these and I am currently title holder of mom of the year. That is of course, until I ask if homework is done and then all bets are off. Wait a minute, isn’t this post about S’more Brownie Bars? Right, right. Here’s the recipe.

S’More Brownie Bars

Crust:

2 1/4 cup graham cracker crumbs
3 tbsps sugar
1/4 tsp salt
6 tbsps unsalted butter, melted

s'more brownie bars

Brownie:

6 ounces bittersweet chocolate, chopped
3/4 cup unsalted butter
3 eggs
1 1/4 cup sugar
1 cup all-purpose flour
1 tsp salt
2 tsp vanilla

Topping:

1 jar marshmallow cream (198g)
2 tbsps milk
1 cup Hershey’s mini chocolate Kisses
8 graham crackers broken up

Combine cracker crumbs, sugar, salt and butter in a bowl until evenly moistened. Transfer to a 13x9x2 inch baking pan; press evenly into bottom. Refrigerate at least 1 hour until set.

Preheat oven to 350F.

Combine chocolate and butter in a medium glass bowl and microwave on high until chocolate and butter are melted. Stir mixture until smooth.

Beat eggs and sugar in a large bowl until blended. While beating, gradually add chocolate mixture to egg mixture; beat until smooth. Stir in flour and salt. Add vanilla. Pour evenly over graham cracker crust.

Bake at 350F for 30 minutes or until centre is set.

While brownie is baking prepare topping. Whisk marshmallow cream and milk in a small bowl until smooth. When brownie is done remove from oven and pour marshmallow mixture over top, tipping pan to completely cover the brownie.

Sprinkle Kisses evenly over marshmallow and scatter broken up graham crackers over top. Return to oven for 3 minutes more until Kisses are glossy. Let cool completely on a wire rack. Cut into bars.
