Mini Chocolate Chip Banana Muffins

by Candace Sampson

Not only is the easiest recipe I’ve ever found for Chocolate Chip Banana Muffins (one bowl, toss it all together kind of easy), it’s also the most delicious. This recipe makes 48 Mini Chocolate Chip Banana Muffins or 12 large muffins or one good sized loaf.

Mini Chocolate Chip Banana Muffins

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 ripe bananas
1/2 cup butter (room temperature)
2 eggs
1 cup chocolate chips

Heat oven to 350. Combine and mix all ingredients together in a large mixing bowl. Place batter in a greased bread pan (bottom only) or muffin tins. ( I spray my mini muffin pans with Pam). Bake mini-muffins for 12 minutes or until toothpick inserted comes out clean. Larger muffins will take approximately 25 minutes and a loaf will take 40 to 50 minutes. Remove from oven and let cool 10 minutes. Complete cooling on a wire rack.

These were such a big hit! Today, I am here to tell you that there are three *very* ripe bananas in my kitchen telling me I’ll be baking these again this afternoon. 😉 Apparently, I have demand-y bananas!

    I swear I am not a blog stalker! 😀

I just made these for the Things’ after school snack, and this time I used Gluten Free flour and they turned out great! I am so excited!

So happy you shared this recipe and I promise to zip-it about the mini muffins from now on! 😉

This looks so yummy!! Would whole wheat flour translate well?

Hi Emily, I’ve never tried it with whole wheat flour. So if I was to try it I’d maybe go half and half first. Let me know!

These were lovely. I just made half a batch of mini muffins (I only had two smallish very ripe bananas to use up), and baked them about 14 minutes, and they came out perfectly. My kids are in heaven. Thanks!

I make banana bread or muffins all the time, they don’t last around here. Yummy muffins!

Made these last evening. I followed the recipe exactly, except for 3 minor changes #1 I used mini chocolate chips, #2 I sprinkled additional mini chips on the top before baking and #3 I left them in for 14 minutes as another reviewer did. They were fantastic! My husband and 3 year old son gobbled them up! Although freezing them is a great idea, I’m not quite sure there will be any left to freeze, lol. Next time I double the recipe!!

Just want to say thanks for the great recipe. I first made them last Christmas and have been ever since. Once in a while I replace part of the butter or sugar with some applesauce just to make a little healthier. Also you can use a little less butter and they are just as good. Thanks again.
