Mango Pineapple Salsa

Sometimes, when you’re serving something very spicy, it’s nice to serve a side that can take the heat off a little. This Mango Pineapple Salsa fits the bill perfectly and is ideal as a side with Jerk Chicken or fish.

Let’s not overlook the health benefits of this Mango Pineapple Salsa either. Mango can help prevent cancer among other things, pineapple keeps your gums healthy, red pepper can help with your night vision, tomatoes can reduce the risk of heart disease, cilantro can help lower blood sugar, green onions are good for your bones, lime prevents premature aging, and finally jalapenos help with weight loss. Wait a minute, maybe this should be called The Fountain of Youth? No. Okay then, we’ll stick with Mango Pineapple Salsa.

Mango Pineapple Salsa

1 cup chopped mango
1 cup chopped pineapple
1/2 cup chopped red pepper
1 small tomato, seeded and chopped
3 tbsps chopped cilantro
3 green onions
2 tbsps lime juice
1 jalapeno pepper, finely chopped

Combine all ingredients in a medium bowl. Cover and refrigerate for at least an hour to let flavours mingle. Serve with chicken or fish. This would also be great for snacking with tortilla chips.

    Yum! I make mango salsa quite often, but I’ve never tried it with pineapple. It’s now on the menu for the weekend. Thanks Candace!
