Summer is here and the living is easy. Or is it? I’d love to track down the person that sold us that bill of goods.
Just because the seasons change doesn’t mean our lives slow down. We still have to work; we still have to get kids to activities and we still have to make dinner. That’s why when summer arrives it’s all about efficiency in my house. I look for maximum impact with minimal effort on most of my daily responsibilities. That way I can enjoy every minute of our all too short season.
Here a few examples of what I mean:
Kids need a bath, throw them in the pool.
House needs to be cleaned, get outside and ignore it.
Work needs to be done, move the laptop by the pool.
Dinner needs to be made, hit my local Sobeys for Cardinal Ready meats. Voila! Dinner is served.
While there is no doubt that I love my summer barbecues and making gourmet meals, time isn’t always on my side. That doesn’t mean I want to compromise on healthy and delicious meals for my family. With that always top of mind, I try to find options that I can make during the summer that satisfy three requirements.
1) It must be delicious
2) It must be quick to cook
3) It must require little planning to pull a meal together. Remember my motto, maximum impact = minimal effort.
That’s why I love Cardinal Ready so much. By starting with one of their delicious entrée selections I can easily pull a complete and nutritious meal together by grabbing a hot side and a salad from my local Sobeys deli counter. And it’s easy to be inspired on the fly with Ready.
I hit my local Sobeys last week at 4:30 with no dinner plan in place and a family on the verge of being very hangry. I needed to act fast.
I went directly to the meat department and grabbed the Cardinal Ready Pulled Pork in Chipotle Sauce. From there it was a snap. A bag of mini-sliders, ready-made coleslaw, roasted potato wedges and a green salad rounded out the meal. By 5:15 every one was happily fed. By 5:30 my kitchen was clean, I had zero leftovers to clean up and the rest of the gorgeous summer evening lay ahead of me.
With nine delicious entrees to choose from including Butter Chicken, Slow Cooked Diced Beef and Farmers Sausage, pulling summer dinners together on the fly is going to be easy this summer.
Oh silly me, did I say dinner? I almost forgot about lunches!!! That’s right, no longer will I have to worry about what to send them to school with, but rather what I’ll feed them at home! Thankfully, I’ve got a plan in place. I predict Classy Sloppy Joe’s will be a big hit.
