Classic Bran Muffins

There just ain’t nothing sexy about bran muffins. Except for the fact that they’re good for you. Well, hey, that’s kinda sexy, right? This is a classic recipe that actually is delicious. I serve mine to my kids with a smoothie for breakfast.

Bran Muffins

1 1/2 cups wheat bran
1 cup buttermilk
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1/2 tsp vanilla
1 cup all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup raisins or dates (optional)

Preheat oven to 375F. Mix together wheat bran and buttemilk; let stand. Combine vegetable oil, egg, brown sugar, and vanilla. Add to buttermilk bran mixture. Sift flour, baking soda, baking powder and salt into buttermilk bran mixture and stir until just combined. Add raisins or dates if you wish. Spoon into lightly sprayed muffin tin. Bake for 15-20 minutes or until toothpick inserted comes out clean.
