Bacon Cheddar Apple Scones

Nothing says lovin’ like baked goods and these Bacon Cheddar Apple Scones scream love. For starters, who doesn’t love warm scones from the oven? Secondly, bacon. Third, cheese. Honestly, need I say more? I either had you at bacon or cheddar, but either way you know these babies are right up your alley.

That’s why I chose these Bacon Cheddar Apple Scones for my February Life Made Delicious post, since February is all about the love. We’re loving each other on Valentine’s day and loving our families on Family Day, and loving the world as we celebrate the Olympics. It’s a very sentimental month, so why not bring on the foods we love too.

Bacon Cheddar Apple Scones

2 1/4 cups flour
3 tbsp. plus 1 tsp sugar, divided
1 tbsp. baking powder
6 tbsp. cold butter, cut into 1/2″ pieces
2 slices of bacon, cooked crisp and crumbled
1 Gala apple (cored and diced, I leave the skin on, you may choose to remove)
1 cup plus 1 tbsp buttermilk, divided
1 cup grated old cheddar cheese

Preheat oven to 425F. Combine flour, sugar and baking powder in a food processor using pulse function. Add butter and using pulse function, process until coarse crumbs appear. Transfer contents to a large bowl. Add bacon, cheese and apple and toss well. Stir in 1 cup buttermilk until soft dough forms.

Turn dough out onto floured surface and knead five to six times. Divide dough in half and shape each half into a 6″ wide circle. Cut each circle into eight wedges. Place wedges 1″ apart on baking sheet. Brush tops with remaining 1 tbsp buttermilk and sprinkle with 1 tsp of sugar. Bake for 20 minutes. Makes 16 scones.

You can freeze uncooked scones (and this applies to any scone recipe) and then bake them straight from the freezer. Wrap well on sheet pan lined with parchment paper until you’re ready to use, or freeze in a container with layers separated by parchment.
