Cheesy Cauliflower Soup

Poor cauliflower. It gets a bad rap really. I mean do you ever hear anybody say “I could really go for some cauliflower right now.” or “Man, I was craving cauliflower so bad last night I ate a whole head of it.” Sadly no, no you don’t. You might however hear someone beg you for this Cheesy Cauliflower Soup once you serve it to them because this dish raises the lowly cauliflower to new heights. Glorious, cheesy heights.

Cheesy Cauliflower Soup

2 tbsps butter
1/2 cup finely chopped onion
3 cups coarsely chopped fresh cauliflower
1 can (10 oz) condensed chicken broth
1/4 cup flour
2 1/2 cups 2% milk
1 1/2 cups shredded old cheddar cheese (I like Balderson 2 year old cheddar)
Salt & Pepper
Croutons

Melt butter in a large saucepan. Saute onion until tender, being careful not to brown. Stir in cauliflower and chicken broth. Bring to a boil. Cover and reduce to simmer for about 12-15 minutes until cauliflower is tender. Whisk together flour and milk, ensuring no lumps. Add to saucepan. Cook and stir over medium heat until mixture boils and thickens. Remove from heat. Gradually add cheese and stir until melted. Add salt and pepper to taste. Ladle into bowls and add croutons if using.
