Homemade Marshmallows

I’ve seen a lot of recipes recently for homemade marshmallows and I’ve basically ignored them. I mean, making marshmallows is not really high on my cooking “to-do” list if you know what I mean. They’re available at the store, they’re cheap and I don’t really care about them. That being said, I have a little project in mind for my daughter’s upcoming birthday party and homemade marshmallows are part of the plan. So, I gave them a test run yesterday. I was a little nervous about my culinary abilities on this one. I thought it would be a disaster. I am pleased to report that I was wrong. Not only are homemade marshmallows ridiculously easy to make, they really are delicious.

This is the recipe I used. I would only say this; for the cornstarch/powdered sugar combo, go less cornstarch, more sugar. I also read somewhere that you can use shredded coconut instead of the sugar/cornstarch. I might try that soon. The best part about homemade marshmallows though? Your kids think you’re the BEST MOM EVER, or at least that’s what I was told.

Marshmallows will last for up to three weeks in an airtight container, layer between wax paper.

You know where these fluffy little pillows of sugary heaven are best? On top of a steaming cup of homemade hot cocoa. Because you’ve thrown that store bought stuff out, right?
