Grilled Marinated Shrimp with Peanut Sauce

Oh sweet, sweet summer, where art thou? Spring has teased us with a handful of warm days but nothing quite like the lazy days that summer can bring. I for one, am ready to spring into action, or rather inaction, when summer finally does arrive. My plan is to have as many simple meals for everyday and entertaining on hand as possible. That’s why I chose this Grilled Marinated Shrimp with Peanut Sauce to share as this month’s Life Made Delicious post. This makes a terrific main dish for a family of four, or it can be served as an easy appetizer for guests. Either way it’s a win for the chef.

Grilled Marinated Shrimp with Peanut Sauce

Shrimp Marinade

1 lb shrimp, peeled and deveined, leave tails on (31-40 count)
1/3 cup apricot jam
1 tbsps soy sauce
2 cloves garlic

Peanut Sauce

1/2 cup smooth peanut butter
1 tbsp brown sugar
1 clove garlic
2 tbsps fresh lemon juice
3 tbsps soy sauce
1 tsp Sriracha sauce (add more if you want it spicier)
1/3 cup water

Place shrimp in a resealable bag. Puree jam, soy sauce, and garlic in a blender. Pour marinade over shrimp, massaging bag to combine. Refrigerate for minimum 30 minutes, but up to 8 hours.

Make peanut sauce by combining peanut butter, brown sugar, lemon juice, soy sauce in blender. Slowly add water while blending. Add Sriracha to taste.

Preheat grill to medium high. Thread about 5 shrimp each on skewers (if using wood skewers, make sure you’ve pre-soaked them). Cook on grill, turning once, until pink throughout. About four to five minutes. Serve on a bed of chopped scallions, with peanut sauce on the side. This makes a wonderful meal if served with rice and a salad. It’s also a perfect appetizer
