How to Make Minion Cupcakes

It always seems that my children have some sort of bake sale to participate in, right around the time I’ve lost my cooking mojo. I end up hemming and hawing and very reluctantly baking something. So last week my daughter announced, with very little notice, that she had a bake sale coming up. Ugh. Now was the time to get the girls to actually make their own bake sale goodies. These Minion Cupcakes were ideal! They were so easy to do, I only pulled the cupcakes out of the oven so no one got burnt and they did the rest. Maybe I’m channeling Gru here, they did the work, I got the pretty pictures. I’m digging this whole putting the minions to work thing.

As an aside, I’d just like to add that it was a good thing Twinkies were saved from almost certain death last year, or I have no idea how these cupcakes would have been made. Who knew, there was actually a good use for Twinkies?

Minion Cupcakes

1 box vanilla cake mix
2 boxes of Twinkies (eight in each box)
1 tub of pre-made icing
Food colouring (your choice of colour)
2 tubes of Ready-To-Use Wilton Icing Tubes in Black
1 package of Wilton Candy Eyeballs
Chocolate sprinkles

Follow directions on cake box to make 24 cupcakes. Let cupcakes cool completely. Assemble your minions (that’s your children) and get them ready to assemble the minions (that’s the cupcakes). Add colour to icing in small bowl and stir to combine. Divide icing over cupcakes. Cut each Twinkie in half. Dab a bit of black icing on the back of each eyeball and place on Twinkie. Outline eyes to make goggles and run down side of minion head. Using black icing give each minion a different facial expression. Place Twinkie cut side down on top of iced cupcake. Add chocolate sprinkles to top of each Twinkie for hair.
