Bunny Bait – Make this for Easter

If you’re here, you’re likely looking for something sweet, pastel, and extremely snackable. Thankfully this bunny bait delivers. I’ve been making some version of this mix for years, and it never fails to disappear faster than the chocolate bunnies on Easter morning.

This no-bake snack mix hits all the marks: sweet and salty, soft and crunchy, fun to make with kids, and dangerously easy to eat by the handful. While a lot of recipes lean on Chex cereal, I’ve always loved using popcorn as the base. It gives you that airy crunch, and it’s the perfect vehicle for catching all that melted white chocolate and sprinkles.

That said, this is a choose-your-own-adventure kind of recipe. Throw in more pretzel sticks for an even saltier bite? Do it. Need to clear out your Easter candy stash? Toss it in. I’ve made this with mini eggs, marshmallows, and even frosted animal cookies. The rule here is simple: if it’s sweet and looks cute, it probably belongs in the bowl.

Bunny bait is also great for gifting. Package it up in little treat bags with ribbon for class parties, neighbours, or last-minute Easter favours. It holds up well, travels great, and can be made a few days in advance, which is basically a holiday miracle.

If you’re more of a cereal fan, you can swap the popcorn for Chex, Cheerios, or whatever’s in your pantry. This recipe doesn’t judge.

The most important part? The white chocolate. That’s the glue that brings everything together, literally and figuratively, and makes it feel just indulgent enough to be a “treat,” even if you’re sneaking it from the container the night before Easter brunch (we’ve all been there).

Pro Tip: Turn this into a hands-on activity for kids! Set out bowls of ingredients and let them build their own bunny bait cups. It’s fun, messy, and doubles as a party or classroom activity that keeps little hands busy (and sticky).

Make This Your Own

This is genuinely one of those recipes where you can’t really go wrong. Here are some easy ways to switch it up:

Swap the M&Ms for Cadbury Mini Eggs. This is the Canadian move. Mini Eggs have that slightly thicker candy shell and they hold up beautifully in the mix. They also look gorgeous in the pastel colour department. No reshooting required, just swap and go.

Try Canadian Smarties instead. Not the chalky American kind. The chocolate kind. They melt into the mix a little differently and give you a slightly more rustic look, which honestly is part of the charm.

Add marshmallows. Mini marshmallows tucked into the mix add a soft, pillowy contrast to the crunch. Kids lose their minds for this variation.

Go cereal instead of popcorn. Rice Chex or Cheerios work well if popcorn isn’t your thing. Same method, same white chocolate drizzle, totally different texture. Still delicious.

Double the pretzel sticks. If you like your sweet and salty ratio leaning hard toward salty, just throw in more pretzels. Nobody has ever complained about too many pretzels.

How long does bunny bait last?

Stored in an airtight container at room temperature, it keeps well for up to a week. In practice it rarely makes it past day two, but theoretically, a week.

Can I make bunny bait ahead of time?

es, and honestly you should. It’s one of the better make-ahead Easter treats because the white chocolate sets firm and the mix doesn’t get soggy. Make it two to three days before you need it, store it in a sealed container, and you’re done.

Can I use white chocolate chips instead of candy melts?

You can, but candy melts or melting wafers are easier to work with. They melt more smoothly and set faster. If you use white chocolate chips, melt them slowly in shorter microwave intervals and don’t overheat them or they’ll seize up.

Is bunny bait gluten free?

Not as written, because of the pretzel sticks. But it’s an easy fix. Swap in gluten-free pretzels, and for the cereal variation, I’ve recently gone down the gluten-free rabbit hole myself and can tell you that Farmgirl Cereal’s Honey O’s are a perfect swap. No sad substitute energy, just actually good cereal that happens to be gluten free. Double-check your candy labels too and you’re set.

What’s the best way to package bunny bait for gifting?

Clear cello bags tied with pastel ribbon are the classic move and they look great. You can also use small kraft boxes or mason jars if you want something a little more substantial. Either way, make a tag. It makes a huge difference.

Bunny Bait Recipe

Make this delicious bunny bait to give at Easter, or just keep it to yourself. No shame.

Prep Time 14 minutes
Resting time 30 minutes
Servings 8

Ingredients

  • 1/2 cup unpopped popcorn kernels
  • 12 oz. white chocolate candy melts
  • 1 1/3 cups pretzel sticks
  • 1 12 oz. bag pastel coloured M&M’s
  • Easter Coloured Sprinkles

Instructions

Directions:

  1. Make popcorn…..the easy, healthy way. 

    2)Pour into a large bowl, removing any unpopped kernels. Toss in pretzel and M&M’s. 

    3) Melt white chocolate in microwave in microwave safe bowl on high in 30 second intervals, stirring after each interval until melted and smooth. Drizzle half of melted white chocolate over popcorn mixture, then stir, tossing gently a few times with rubber spatula. Then drizzle remaining half of melted white chocolate over popcorn, and gently stir until evenly coated. Do not over-stir. 

    4)Pour mixture into a single layer onto to wax paper. 

    5) Sprinkle with Easter sprinkles before chocolate hardens. Allow to cool and harden, then gently break into pieces and lock yourself in a room and enjoy. I kid.

    6)Store it in a airtight container or fill cello bags and tie with pretty ribbon to give away.
