Boil potatoes in a medium-sized pot. When the potatoes are tender, drain and cut into quarters. Place them aside in a mixing bowl to cool.

Add the oil to a medium-high heat pan and then add the onion, slowing adding in the Patak's Mild Curry Paste releasing the full flavours and aroma of the paste.

Add the sweet peas after five minutes and let cook for three minutes or until peas are cooked through. Remove from the heat and let the paste mixture cool.

Mix the paste mixture with the mayonnaise, paprika, and the potatoes and serve at room temperature or chilled.
