This is a catfish.
This is what my friend Heather and her family were doing in Winnipeg. Catfishing. Okey dokey then. Living vicariously through the Davis family is going to be interesting. So here then is a recipe for catfish. And it is DELICIOUS. I’m just glad I didn’t have to go catch and clean one of these things. Phew! Not gonna lie, I’m a little nervous for when we get to curry. Just sayin’
2 tsps garlic salt
2 tsps dried thyme
2 tsps paprika
1/2 tsp cayenne
1/2 tsp hot pepper sauce
1/4 tsp pepper
1/4 cup butter
4 six to eight ounce catfish fillets
1. Combine the first six ingredients in a bowl and then brush over both sides of fish fillets.
2. Place a large cast iron skillet over medium high heat and melt butter. Add catfish. Grill, covered, for six to eight minutes each side or until fish flakes away easily with a fork.
Suggested sides: potato salad and corn on the cob
