There are two things that go hand in hand in my opinion, barbecuing and entertaining. There’s just something about entertaining around the grill that makes having people over more fun than usual. Throwing dinner on the grill means that meals are less stuffy, and getting a little sauce on your chin is no big deal. Now that I’m in my seventh month as a Patak’s Mom, I’m getting more and more comfortable mixing in a little India. So much so, that I’m now entertaining and sharing my love of all things Indian with my friends. Our first barbecue of the season was this Grilled Chicken Tikka Masala.
Looks delicious, right? It’s also ridiculously easy thanks to Patak’s.
Grilled Chicken Tikka Masala
1 cup plain yogurt
1 tbsp lemon juice
2 tsps ground cumin
1 tsp cayenne pepper
1 tsp black pepper
2 tsp kosher salt
1 tsp cinnamon
1 tbsp fresh minced ginger or jarred ginger
4 split chicken breasts, cut into 1″ cubes
1 Jar Patak’s Tikka Masala Sauce
Mix yogurt and next seven ingredients together in large bowl. Add chicken breasts, stir to coat well. Cover and refrigerate for at least an hour, but up to four. Preheat barbecue. While barbecue is heating up, thread chicken onto skewers and discard marinade. Cook over medium-high grill until chicken reaches an internal temperature of 165F. While chicken is cooking, heat up Patak’s Tikka Masala sauce. Place skewers on plate and drizzle with sauce. Serve extra on the side for those who like it extra saucy.
