Cinnamon Belgian Waffles

If you don’t have a waffle maker, you should really consider investing in one. They make you look talented and stuff. I have lots of different recipes for waffles but these are by far my favorite. Light and airy with just a pinch of cinnamon, they are delicious served with fresh cut strawberries and whipped cream, a fruit compote, liquid gold AKA maple syrup or Slow Cooker Applesauce. I found this recipe on Allrecipes. One of my happy places.

Cinnamon Belgian Waffles

2 egg yolks
1 tsp vanilla extract
1 cup buttermilk
1/4 cup melted butter
1 cup all-purpose flour
1 1/2 tsps baking powder
1/2 tsp baking soda
1/2 tbsp white sugar
1/4 tsp salt
2 egg whites
1 pinch ground cinnamon

Preheat your waffle maker. In a medium bowl, whisk together egg yolks, vanilla, buttermilk and melted butter until well blended. Combine flour, baking powder, baking soda, sugar, salt and cinnamon; stir into the buttermilk mixture. In a separate bowl, whip the egg whites with an electric mixer until stiff. Fold into the batter. Spoon batter onto the hot waffle iron, close and cook until golden brown.

I make this recipe on a Sunday morning and double or even triple the recipe. I let the waffles cool and then freeze between layers of wax paper for quick breakfasts during the week. It’s just as easy to do it this way and then you’re prepared for busy mornings weekday morning and you still look really talented.
