Cake is ok, but pie makes me really happy. This is my mom’s recipe and I ask for it every year on my birthday instead of cake.
Apple Crumble Pie
For filling:
3/4 cup white sugar
2 tbsp corn syrup
1/2 cup water
1 tbsp butter
6 Granny Smith Apples, cut into chunks
6 Golden Delicious Apples, cut into chunks
For topping:
1/2 cup brown sugar
3/4 cup flour
1/2 cup butter, cold
Heat oven to 350. Bake Perfect Pie Crust for 15 minutes or until starting to brown. Push down with back of fork when it starts to bubble. Meanwhile on top of stove place sugar, corn syrup, water and apples in a large pot. Cook until apples soften. Add one tablespoon butter. Spoon into pie crust. I leave most of liquid behind, my mother adds it in. Go with what you prefer here. Mix together brown sugar, flour and butter with pastry cutter until crumbly. Sprinkle over top of pie filling. Bake at 350 for 30 minutes or until top is browned.
