Vanilla Ice Cream

Look, we can’t pretend that ice cream is good for you. It’s a comfort food, plain and simple. It’s fattening, decadent and a total TREAT! So, it you’re eating it like you should be, sparingly, why would you buy stuff that’s filled with ingredients you can’t pronounce? Invest in an ice cream maker and start making your own, like this chocolate ice cream or this one below. Four ingredients baby. Unless of course you have any diethylglycol or piperonal on hand.

Vanilla Ice Cream

1 1/2 cups whole milk
1 1/8 cup granulated sugar
3 cups heavy cream
1 1/2 tbsps pure vanilla extract

In a medium mixing bowl, use a hand mixer on low speed to combine the milk and granulated sugar until the sugar is dissolved, about 1 to 2 minutes. Stir in the heavy cream and vanilla. Turn your machine on; pour the mixture into the bowl and let mix until thickened, about 20 to 25 minute. Ice cream will have a soft, creamy texture. Transfer to an airtight container and freeze for about 2 hours. Remove from freezer and let soften about 15 minutes before serving.

Hot Fudge Pudding

Sunday night is dessert night at my house. Occasionally though, I don’t feel like making it. That’s why this recipe is the bomb. Except for the final step, this is a dessert your kids can make. Or maybe even your husband. It’s that easy. Serve with vanilla ice cream.

Hot Fudge Pudding

1 cup all-purpose flour
2/3 cup granulated sugar
2 tsps baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup unsweetened cocoa
1/2 cup whole milk
2 tbsps melted butter
1 tsp vanilla extract
1 cup packed brown sugar
1 1/2 cups boiling water
vanilla ice cream

Preheat oven to 350F. Grease and 8×8 glass baking dish. In a medium bowl, combine flour, granulated sugar, baking powder, salt, cinnamon, and 1/4 cup cocoa. Whisk in milk, butter and vanilla just until smooth. Spread batter into baking dish. In a small bowl, mix brown sugar and 1/4 cup cocoa; sprinkle evenly over batter. Carefully pour boiling water over mixture in baking dish; do not stir. Bake 30 minutes (batter will separate into cake and pudding layers). Cool in pan on wire rack for 10 minutes. Serve warm with ice cream.
