Time to go Italian with our Hamilton Beach Quesadilla Maker. This is another perfect after school snack if divided in two or a great meal with a side salad. It’s fast and the lord knows we need fast around here some nights.

You’ll need shredded Italian cheese, pepperoni and pizza sauce. Brush each quesadilla with olive oil. Lay one quesadilla oil side down on Hamilton Beach Quesadilla Maker, spread pizza sauce, layer with cheese and pepperoni. (Add mushrooms, pepper, onions, sliced tomato, anything your little Italian craving heart desires) Top with other quesadilla, oil side up. Close lid until light turns green. Serve with more pizza sauce on the side for dipping.

This also makes a great lunch for the kids for school. Go lighter on the sauce so it doesn’t get soggy. Cut into triangles and send with pizza sauce on the side.

What? Too obvious after yesterdays Facebook Quesadillas?

So here’s the question today. Can it still be called a quesadilla when the influence is actually Asian? A quesadilla after all is Mexican, right? Or is this what you would call fusion cuisine? Whatever it is, it’s delicious and makes a terrific appetizer or snack.

You will need:

For Scallion Quesadillas

1 egg white
1 tbsp toasted sesame oil
4 flour tortillas
1/2 cup finely chopped scallions
2 tbsp chopped fresh cilantro

For Soy Dipping Sauce

4 tsps low-sodium soy sauce
2 tsps rice vinegar
1 tbsp water
1/4 tsp toasted sesame oil
1/2 tsp sesame seeds

Combine ingredients for Soy Dipping Sauce in a small bowl and whisk with a fork. Set aside. In a small bowl, whisk together 1 large egg white and 1 tablespoon toasted sesame oil; brush over one side of 4 tortillas. In a small bowl, mix together scallions and fresh cilantro. Divide mixture between two tortillas; spread in an even layer, leaving a one inch border. Top with remaining quesadillas (brushed side down). Transfer one to the Hamilton Beach Quesadilla Maker, close lid and cook until light turns green. Transfer to a plate and cut into six triangles. Serve with Soy Dipping Sauce.

Facebook Chicken Quesadilla

Ok, ok, the title is just a blatant and gratuitous ploy to get you to go like my Facebook page. I’m shameless I tell you. Totally shameless. Now that we’ve got that out of the way, here is today’s Quesadilla recipe. Are you ready? Wait for it……. It’s a little complicated.

The "I Don't Have Time to Shred Cheese" Recipe

I love nothing more than spending time in my kitchen. Things made from scratch are normally the best in my humble opinion. However, some days you don’t have time to roast a chicken, make fresh salsa and shred some cheese. Most days actually. This is a classic quesadilla recipe and it takes about five minutes to make. You have five minutes right? It’s also much easier on the pocketbook than eating out and frankly better tasting too.

Place a quesadilla on top of Hamilton Beach Quesadilla Maker, spread cheese, pico de gallo, chicken and frozen corn. Cover with more shredded cheese and top with another quesadilla. Close lid until light is green. Remove, cut into six triangles and serve to your adoring family. Serve with sour cream and store bought guacamole, because if you didn’t have time to shred cheese, you totally don’t have time to make guacamole. Enjoy.

Hamilton Beach Quesadilla Maker

So, I’ve been playing around with the Hamilton Beach Quesadilla maker for a few weeks now. I wanted to make sure that it would be an appliance I would use a lot and not something that would collect dust with countless other appliances in the depth of my basement. I also wanted to ensure I had a strong grasp of the spelling of “quesadilla” because when you’re giving people a week of quesadilla recipes you don’t want to look stupid. True story. With that being said two things have happened. The Quesadilla maker has been used non-stop and I could now win a spelling bee if quesadilla was the winning word. So one result is useful, the other not so much. Anyhoo, on to the meat of the blog here. I’m GIVING one away. Woohoo. Go Pleasantville, it’s your birthday. Spread Nutella on two tortillas. Place one tortilla on top of quesadilla maker, top with sliced banana, cover with other tortilla and close lid. Open lid when light is green. Using pizza cutter, cut into triangles. Serve with a tall glass of ice cold milk. Delicious! Also, in case you haven’t noticed, super easy. Mondays are crazy at this house. The girls walk through the door from school and have just enough time to grab a snack and they’re gone for their sports that night. Supper comes much, much later. This quesadilla is the perfect thing to get them through.
