Not only is the easiest recipe I’ve ever found for Chocolate Chip Banana Muffins (one bowl, toss it all together kind of easy), it’s also the most delicious. This recipe makes 48 mini muffins, 12 large muffins or one good sized loaf.
Mini Chocolate Chip Banana Muffins
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 ripe bananas
1/2 cup butter (room temperature)
1 cup chocolate chips
Heat oven to 350. Combine and mix all ingredients together in a large mixing bowl. Place batter in a greased bread pan (bottom only) or muffin tins. ( I spray my mini muffin pans with Pam). Bake mini-muffins for 12 minutes or until toothpick inserted comes out clean. Larger muffins will take approximately 25 minutes and a loaf will take 40 to 50 minutes. Remove from oven and let cool 10 minutes. Complete cooling on a wire rack.
